Serves 6


  • ½ clove garlic, peeled and bashed to a pulp
  • 1 good handful fresh basil, bashed to a pulp
  • 1 small handful toasted pine nuts, bashed to bits
  • 6 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • sea salt
  • freshly ground black pepper


Mix everything together in a bowl and season to taste.

French Dressing

Great with green salads and bitter leaves like endive or radicchio.

Serves 13


  • 5 tablespoons white wine vinegar
  • 4 tablespoons walnut oil
  • 115 ml crème fraîche
  • 1 teaspoon Dijon mustard
  • sea salt
  • freshly ground black pepper
  • 1 handful parsley leaves, chopped
  • 8 tablespoons best-quality extra virgin olive oil


Put all your ingredients into a jam jar. Shake, taste and season again if needed until your dressing is perfect. You may need to add a little more vinegar or oil to balance it.

Molho light de mostarda


• 2 col. (chá) de mel
• 5 col. (sopa) de mostarda amarela
• 1/2 xíc. (chá) de suco de laranja
• 1/2 xíc. (chá) de azeite de oliva
• Sal a gosto

Modo de preparo

Misture todos os ingredientes e bata com um garfo até incorporar o mel.

Molho de mostarda e mel

1/3 de xícara de vinagre balsâmico
1/4 de xícara de mostarda
1 colher de chá de sal
1/4 de xícara de mel
1 xícara de azeite

Numa tigela pequena, misture bem o vinagre, a mostarda, o
sal e o mel. Acrescente o azeite em fio, batendo sempre com
um garfo até engrossar. Reserve na geladeira. Esse
molho pode ser armazenado 15 dias, na geladeira.
